Introduction
Traditional Mexican simmered stove top pork-the way Diana's mami has always made it. Great way to prepare pork chops or osso bucco cuts of premium pork. Serve with white rice or beans and corn tortillas.
Steps
Place tomatoes, garlic, oregano, onion, peppercorn, corriander, salt and water into a blender and mix.
Place pork and sauce into a saute pan or cast iron pan. Simmer covered on medium-low heat for 30-45 minutes. Allow some of the steam to escape, add water if it evaporates too quickly. Allow to continue to cook down until the fat melts off of the pork. Meat should feel tender with a fork. Once the meat is desired tenderness, remove the lid and allow the meat to crip in sauce.
Serve meat topped with sauce and accompany with beans, rice and tortillas
