Preservation Series: Blanching Scapes
Too many scapes to cook this week? Learn how EASY it is to freeze them by following these easy steps. the pasta sauce in the middle of February will thank you!
Wash scapes and chop to desired length (make sure they are big enough to get caught in your strainer).
Bring pot 3/4 full of water to a boil.
Add scapes to boiling water for 30 seconds. They will turn bright green.
Remove scapes from boiling water and add to ice water bath for 30 seconds.
Place scapes into freezer ziplock bag or food saver bag and store up to 12 months in freezer.
1- bunch of garlic scapes
1- 3/4 full pot of boiling water
1- bowl of ice water
