KEFTEDES- Greek Meatballs

Introduction

Delicious, flavorful main dish. Easy meal to prepare on ground pork CSA weeks. Most ingredients are in your basket!

KEFTEDES- Greek Meatballs

Steps

  1. Preheat oven at 450.

  2. In a bowl, whisk onion, garlic, bread crumbs, egg, parsley, spearmint, lemon juice, oregano, salt and pepper.  Add the ground pork and hand mix.  Form meatballs into preferred size.

  3.  Dredge the meatballs lightly in flour making sure to shake off any excess. Fry until nicely browned on all sides.  Place in pan for baking.

  4. Place into oven and cook until internal temperature is 165.  You may continue to cook until fats melt out of the meatballs to preferred dryness.  

  5. While the meatballs are baking, combine incredients to prepare the Tzatziki Sauce.  

  6. Serve with sauce, pita bread and feta.

  7. Enjoy!

Ingredients

Meatballs:

  • 1 pound ground pork 

  • 1 medium red onion, grated

  • 1 medium clove of garlic, minced

  • 1 cup panko or regular bread crumbs 

  • 1 large egg

  • 1 1/2 tbsp fresh parsley, chopped

  • 1 1/2 tbsp fresh spearmint, chopped 

  • 1 tbsp lemon juice

  • 1 teaspoon oregano

  • 1 teaspoon corriander (optional)

  • 1 teaspoon cumin (optional)

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • oil for frying

  • flour for dredging

Tzatziki Sauce:

  • Cucumber, partially peeled (striped) and sliced

  • 1 tsp kosher salt

  • 4 to 5 garlic cloves, peeled, finely grated or minced 

  • 1 tsp lemon juice

  • 2 cups Greek yogurt 

  • ¼ tsp ground white pepper
