This spicy dish is perfect for a Sunday morning, or any morning!

Eggs In Purgatory


  • Place the olive oil, onion and garlic in a pan.  Saute until onion becomes translucent.  Set aside.

  • Blend crushed red pepper, cayenne, tomatoes, basil, parsley and salt.  Add to onion and garlic on medium heat.  Allow to simmer and cook down to desired consistency.

  • Carefully crack eggs into a bowl, keeping them intact. Slowly add to simmering sauce and cover.  Allow to cook to desired hardness.

  • Serve with toast and grated parmesan.


  • 1/4 cup of olive oil

  • 1 small onion, chopped

  • 5 cloves of garlic, smashed

  • 1 jalepeño peppers, seeded and diced

  • 1/2 teaspoon crushed red pepper

  • 1/8 teaspoon cayenne pepper

  • 5 tomatoes

  • fresh basil

  • fresh parsley

  • salt

  • 8 eggs
