Gilgeori Toast (Korean Street Toast)

Introduction
Yummy recipe shared by Jon Marks! Traditionally with carrots, cabbage and scallions. Jon substituted salad turnips for carrots since that's what they got in their farm share.

Steps
Butter both sides of bread, fry in pan until crispy brown, remove and set aside (To keep traditional, sprinkle 1 side of toast with sugar, we spread a hot pepper jelly instead)
Combine vegetables in a bowl, add a touch of salt and pepper, massage for 30 seconds to soften cabbage
Add egg to vegetables in bowl, mix thoroughly
Add butter or neutral oil to fry pan, when hot, add egg and veggie mix to pan. Use 2 spatulas to keep shape and hold mixture into a patty that is same size as bread. (We made 3 servings and cooked it all at once, cutting it into patties after it was cooked). Cook for 2-3 minutes until lightly browned.
Flip patty and add sliced ham and cheese (if using) and cook for 2-3 minutes more until second side of patty is browned.
Put patty on toast and add any condiments (We used a sriracha mayo)

Ingredients
For One Sandwich
1 salad turnip (Or quarter carrot or equivalent amount any crunchy vegetable), julienned
3 oz chinese cabbage, sliced thin
1-2 scallions, slice thin at an angle
1 egg (or 2 for heartier sandwich)
2 slices bread, or hard roll
Optional condiments (Sugar, ketchup, mayo, siracha, jam, etc) and toppings (ham, cheese). (Traditional is sugar and ketchup)
